RAW bistro \u00e8 nato a dicembre 2024 a Costa Volpino, tra la provincia di Bergamo e quella Brescia, sul lago d&#8217;Iseo.\u00a0<em>\u00abLa direzione del locale \u00e8 quella che avevamo comunque sin dall&#8217;inizio, abbiamo solo raddrizzato il tiro\u00bb. \u00a0<\/em><\/p>\n\n\n\n<p><strong>RAW Bistrot a Costa Volpino (BG), sul lago d&#8217;Iseo: nuovo menu e successo crescente<\/strong><\/p>\n\n\n\n<p>In fondo la filosofia di<strong>&nbsp;RAW bistrot<\/strong>&nbsp;\u00e8 semplice. Materie prime di qualit\u00e0, servizio cortese ma non invadente e tanta sostanza, in sala, in cucina e in cantina.&nbsp;<em>\u00abProponiamo solo piatti con ingredienti eccezionali ed \u00e8 proprio dalla grande qualit\u00e0 della materia prima che andiamo a costruire il piatto\u00bb<\/em>, continua Cristiano Calore, che in questa nuova avventura non si sente protagonista, ma solo regista del talento altrui (e infatti nella foto qui non compare), quello della brigata di cucina guidata dallo chef&nbsp;<strong>Alessandro Pilatti<\/strong>&nbsp;e quello dello staff di sala, coordinato da&nbsp;<strong>Davide Filisetti.<\/strong>&nbsp;<em>\u00abOgni piatto nasce in cucina dalle mani dei nostri chef, in proposte che esaltano i sapori di ogni singolo ingrediente, mantenendo comunque una grande leggerezza\u00bb<\/em>, spiega Cristiano Calore.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Il nuovo menu di RAW mette insieme carni alla griglia d&#8217;eccellenza e diverse proposte sorprendenti, di carne, pesce e vegetariane<\/strong>.&nbsp;<\/h2>\n\n\n\n<p><em>\u00abUno dei piatti pi\u00f9 particolari dell nuovo menu \u00e8&nbsp;<\/em><strong><em>l&#8217;uovo a 65\u00b0<\/em><\/strong><em>. Viene servito con bagna cauda e per chi lo desidera con caviale premium. Sta davvero piacendo molto\u00bb<\/em>, racconta Cristiano. Un altro punto forte del menu \u00e8 poi il fondente di manzo, che viene preparato utilizzando la guancia, unendo tradizione e territorio.&nbsp;<em>\u00abC&#8217;\u00e8 poi il pacchero ai sapori di lago, che \u00e8 gi\u00e0 diventato un piatto simbolo sia perch\u00e9 \u00e8 buono e legato al territorio&#8230; sia perch\u00e9 diversi personaggi molto noti l&#8217;hanno assaggiato e postato sui social &nbsp;nelle loro stories\u00bb<\/em>, conclude il titolare. Si tratta dell&#8217; l&#8217;unico piatto che verr\u00e0 mantenuto nel men\u00f9, gli altri cambieranno nel tempo.<\/p>\n\n\n\n<p><strong>RAW bistrot,<\/strong>&nbsp;a Costa Volpino (BG), sulla sponda Nord del Lago d&#8217;Iseo, in un ambiente elegante e rilassante (appena 50 coperti in 380 mq), propone cucina italiana basata su prodotti d&#8217;eccellenza, provenienti soprattutto dal territorio. E&#8217; aperto dal gioved\u00ec al sabato per cena e la domenica a pranzo e a cena.
