Con queste parole <strong>Carlo Petrini,<\/strong> presidente di Slow Food, ha inaugurato ufficialmente la 13esima edizione della pi\u00f9 importante manifestazione internazionale dedicata ai formaggi a latte crudo e ai latticini, a<strong> Bra<\/strong> da oggi fino a luned\u00ec 20 settembre<\/p>\n\n\n\n<p>. \u00abLa transizione ecologica rappresenta una nuova fase storica &#8211; ha aggiunto Petrini -. Cos\u00ec come tre secoli fa iniziava la rivoluzione industriale, oggi siamo all&#8217;alba di una nuova era nella quale abbiamo capito che le risorse non sono infinite, perci\u00f2 occorre imboccare un&#8217;altra strada. In questa fase storica, Cheese rappresenta un messaggio: quello secondo cui occorrono nuove forme di produzione e consumo, perch\u00e9 quelle adottate finora ci hanno portato al disastro ambientale.
